So I am not really a fan of Bananas, however I love Banana Bread. I do struggle to find a good Banana Bread at the store though, even the local bakery. (To be honest, who has time to stop at the bakery with three kids in tow? Not me that’s for sure.) Aldi has a Banana Bread Loaf, but it has maybe two walnuts in it (that’s my favorite part) and it really isn’t that great. The closest Target to my house is not a Super Target, which means they don’t carry the delicious bakery items you find at the Supers. Bum Bum Bum….

So I finally decided to TRY and make my own. I have successfully made a delicious tasting Banana Bread 4 out of 5 times. I may or may not have put a little too much of one ingredient in last time, which I will blame on my Pregnancy Brain.  Speaking of Pregnancy … I started eating Bananas during the beginning of this one and I am not really a fan; I am not sure if it is a texture thing or the smell, but they just aren’t for me most days. Okay, I don’t like them. Haha Well I had a ton of Bananas around because I was eating them left and right and a few were about to go bad, so I figured I would try and make bread. I searched and searched for a recipe that was easy because I hate measuring out ingredients. I usually get them wrong or don’t have one and end up throwing something away because I would have to run to the store to get the rest of what I needed. I couldn’t find one that I really liked, so I wrote down a few and sort of tried my own thing. Well … drum roll … it worked!

I cannot take credit for this recipe as I am sure that someone else made it years and years ago and I am just not discovering it because I happened to add a few things of my own. Either way it is delicious if you make it correctly.

Easy Healthy Banana Bread Recipe

3-4 Ripe Bananas

1/3 Cup melted butter

1 Egg

¾ Cup Sugar

1 Tsp Vanilla Extract

¼ Tsp Salt

1 ½ Cup Whole Wheat Flour

½ Tsp Cinnamon

½ Tsp Nutmeg

1 Tsp Flax Seed

 

Optional: Chopped Walnuts

 

Instructions:

Heat oven to 350 degrees.

Spray 5×9 Baking Pan.

 

Mash Bananas with a fork first.

Add Egg, Melted Butter, Vanilla Extract together.

Add Sugar, Salt, Cinnamon, Nutmeg, and Flax Seed.

Add Flour. Mix.

Add Chopped Walnuts (optional).

 

Pour into baking pan.

Cook for 60 minutes.
